Hyderabad Eggplant

eggplant cilantro

ground red pepper
lemon juice

sesame seeds
turmeric

Directions

  1. Cut eggplant into pieces and deep fry.
  2. Sauté onion, garlic, turmeric, coriander, chili powder, green chili peppers, and curry leaves.
  3. Add coconut, sesame seeds, lemon juice, salt, and water.
  4. Add eggplant.
  5. Add brown sugar to taste
  6. Garnish with chopped cilantro.
