Baingan Bharta (Eggplant)

eggplant black mustard seeds
tomatoes cilantro
fennel seeds
garlic
ginger
green chili peppers
ground red pepper
onion
salt
turmeric

Directions

  1. Heat oil and fry mustard seeds.
  2. When mustard seeds start to pop, add fennel, ginger, garlic, and green chili.
  3. Slice onion and add.
  4. When onion is soft, add turmeric and chili powder.
  5. Cut up eggplant and add.
  6. Add salt.
  7. Chop tomatoes and add.
  8. Chop cilantro and add.
