Baingan Bharta (Eggplant)

Directions
- Heat oil and fry mustard seeds.
- When mustard seeds start to pop, add fennel, ginger, garlic, and green chili.
- Slice onion and add.
- When onion is soft, add turmeric and chili powder.
- Cut up eggplant and add.
- Add salt.
- Chop tomatoes and add.
- Chop cilantro and add.
